Zucchini Noodles with Pesto

- 1 Food Processor or Blender
- 1 Spiralizer
Ingredients
- 4 large zucchinis (spiralized into noodles)
- 1 cup fresh basil leaves
- ¼ cup pine nuts
- 2 cloves garlic
- ¼ cup nutritional yeast
- juice of 1 lemon
- salt and pepper to taste
Instructions
- Sprinkle a few pinches of salt over the zucchini noodles in a bowl. Allow to marinate for 10 minutes.
- In a food processor or blender, blend basil, pine nuts, garlic, nutritional yeast, lemon juice, salt, and pepper until smooth.
- Remove excess water from noodles.
- Toss zucchini noodles with pesto sauce until well coated. Serve immediately.
Notes
- Consider adding cayenne pepper for a little extra kick.
- Sprinkle hemp seed and/or nutritional yeast over top.
- Add cherry tomatoes and/or parsley for garnish.
