Zucchini Noodles with Pesto

Ingredients

zucchinis
(spiralized into noodles)

cup
fresh basil leaves
¼
cup
pine nuts
2
cloves
garlic
¼
cup
nutritional yeast
juice of 1 lemon
salt and pepper to taste
Instructions
Sprinkle a few pinches of salt over the zucchini noodles in a bowl. Allow to marinate for 10 minutes.
In a food processor or blender, blend basil, pine nuts, garlic, nutritional yeast, lemon juice, salt, and pepper until smooth.
Remove excess water from noodles.
Toss zucchini noodles with pesto sauce until well coated. Serve immediately.
Notes
Consider adding cayenne pepper for a little extra kick.
Sprinkle hemp seed and/or nutritional yeast over top.
Add cherry tomatoes and/or parsley for garnish.
