Ingredients

  • 1 block (14 oz) firm tofu (drained and pressed)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon smoked paprika
  • 2 tablespoon parsley (chopped)
  • 2 tablespoon chickpea flour (or any flour for binding)
  • 2 tablespoon olive oil
  • salt and pepper to taste

Instructions

  • Prepare the tofu. Press the tofu to remove excess water. Crumble it into a large bowl until it resembles fine crumbs.
  • Add the chopped onion, minced garlic, cumin, coriander, smoked paprika, fresh parsley, and chickpea flour to the crumbled tofu.
  • Season with salt and pepper to taste.
  • Mix everything well until the mixture starts to hold together. If it's too crumbly, add a little more flour for binding.
  • Shape the kebabs. Take a small portion of the mixture and mold it into a kebab shape (oval or cylindrical). Repeat until all the mixture is used up.
  • Pan Cook the kebabs. Heat the olive oil in a non-stick pan over medium heat. Place the kebabs in the pan and cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Serve the tofu kebabs hot with a side of salad, pita bread, or your favorite dip like tahini sauce or hummus.
