Ingredients

  • 4 cups mixed greens spinach, arugula, kale, or romaine
  • ½ cup shredded red cabbage
  • ½ cup thinly sliced cucumber
  • ½ cup chopped fresh parsley
  • ¼ cup thinly sliced radishes
  • ½ avocado diced
  • ¼ cup hemp seeds or sunflower seeds
  • ¼ cup sprouts broccoli, alfalfa, or mung bean
  • ½ cup steamed asparagus chopped (optional)

Lemon Detox Dressing:

  • 3 tablespoon fresh lemon juice
  • 2 tablespoon extra virgin olive oil or flaxseed oil for an omega boost
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup or raw honey
  • 1 small garlic clove minced
  • Salt and pepper to taste

Instructions

  • In a large salad bowl, combine the mixed greens, shredded cabbage, cucumber, parsley, radishes, and avocado.
  • Sprinkle with hemp seeds (or sunflower seeds) and add sprouts for extra detoxifying power.
  • If using, gently fold in the steamed and chopped asparagus.
  • In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, maple syrup, garlic, salt, and pepper until well combined.
