Ingredients

  • 12 oz Silken Tofu (extra firm)
  • ½ cup Almond Milk (unsweetened)
  • ½ cup Maple Syrup
  • 10 oz Chocolate Chips
  • ½ teaspoon Vanilla Extract
  • 1 Pie Crust
  • Coconut Whip Cream (optional)

Instructions

  • Bake your desired pie crust as directed on the packaging. Allow to cool.
  • Place chocolate chips in a microwave safe bowl and warm in the microwave in increments of 30 seconds for about 2-3 minutes. Do not over heat! Just enough to have all the chips melt. Allow to cool for a few minutes.
  • In a food processor add the tofu, milk, maple syrup, vanilla extract, and chocolate. Blend for about 30 seconds. Take a spatula and scrape the sides and blend again until the mixture is completely smooth.
  • Pour mixture into the cooled pie crust. Allow the pie to set in the refrigerator for at least 6 hours.
  • Cut pie into 8 pieces and enjoy with coconut whip cream!
