Raw Rainbow Wraps

Ingredients

  • 4 leaves large collard green or swiss chard
  • 1 cup shredded carrots
  • 1 cup red bell pepper (sliced)
  • 1 cup cucumber (julienned)
  • 1 avocado (sliced)
  • ¼ cup hummus

Instructions

  • Cut stem from collard green or swiss chard leaves.
  • Spread hummus on each leaf.
  • Layer with carrots, bell pepper, cucumber, and avocado.
  • Roll up and slice in half. Serve immediately.

Notes

  • In addition to cutting the stems away from the wrap leaves, the remaining thick stem can be carefully sliced away giving a little more flexability.
  • The collard green/swiss chard leaves can be softened by soaking in boiled water for 30 seconds or by soaking in warm lemon water for 10 minutes.
  • These can be dressed up in SO MANY ways. Consider adding fresh spouts, tomatoes, or dressings to make it even more hardy.
