large collard green or swiss chard

shredded carrots

red bell pepper
(sliced)

cucumber
(julienned)

avocado
(sliced)

hummus
Instructions
Cut stem from collard green or swiss chard leaves.
Spread hummus on each leaf.
Layer with carrots, bell pepper, cucumber, and avocado.
Roll up and slice in half. Serve immediately.
Notes
In addition to cutting the stems away from the wrap leaves, the remaining thick stem can be carefully sliced away giving a little more flexability.
The collard green/swiss chard leaves can be softened by soaking in boiled water for 30 seconds or by soaking in warm lemon water for 10 minutes.
These can be dressed up in SO MANY ways. Consider adding fresh spouts, tomatoes, or dressings to make it even more hardy.
