Ingredients

  • 15 oz chickpeas (drained and rinsed)
  • ½ cup almond butter (or peanut butter)
  • ¼ cup chocolate chips
  • ¼ cup maple syrup
  • ¼ cup coconut sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 4x4-inch baking dish with parchment paper.
  • Blend the Chickpeas: In a food processor, blend the chickpeas until smooth. Add almond butter, maple syrup, coconut sugar, vanilla extract, baking powder, and salt. Blend until the mixture is well combined and smooth.
  • Add Chocolate Chips: Fold chips into the batter with a spatula.
  • Bake: Spread the batter evenly into the prepared baking dish. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted comes out mostly clean.
  • Cool and Serve: Let the blondies cool for about 10 minutes before slicing into squares. Serve and enjoy!
