You Will Need…
- Collard Green or Swiss Chard: Both Collard Green and Swiss Chard have a bit of bitterness and a great earthy flavor. I am blanching the large leaves to avoid breaking; it also helps roll the wrap without any tearing in the leaves.
- Carrots: Carrots have subtle sweetness with earthy flavor. The crunchy texture of the carrot is so satisfying, and the color makes the wrap vibrant.
- Red pepper: This crunchy pepper has a sweet and mild flavor. It is a little bit earthy, too, which goes well with the freshness of the other ingredients.

- 1 cup red bell pepper (sliced)

- In addition to cutting the stems away from the wrap leaves, the remaining thick stem can be carefully sliced away giving a little more flexability.
- The collard green/swiss chard leaves can be softened by soaking in boiled water for 30 seconds or by soaking in warm lemon water for 10 minutes.
- These can be dressed up in SO MANY ways. Consider adding fresh spouts, tomatoes, or dressings to make it even more hardy.
