What is Nice Cream?
Nice cream is a term that’s been used for the past few years in the plant-based community as a variation of ice cream. Instead of the ice cream being mainly milk it is made with bananas. It’s not harmful to any animals hence the word ‘nice’.
Ingredients
To make this tasty treat you’ll only need 4 ingredients! These are so simple you’re likely to have them in your house already.
- Ripe bananas
- Matcha powder
- Plant-based milk
- Vanilla extract

Instructions
The process is really just 4 simple steps:
- Step 1: Freeze slices or chunks of bananas ahead of time
- Step 2: Add all ingredients to a blender or food processor
- Step 3: Process until creamy
- Step 4: Serve!

- Chopped nuts – almonds or peanuts
- Honey or maple syrup – a drizzle would brighten this treat up
Equipment
A high powered blender or a food processor will work very well for this recipe. Personally, I prefer a Vitamix blender or a solid Cuisinart food processor.
Storage
Store in an airtight container for up to 7 days. Take out of the freezer and allow to sit for 5 minutes before scooping and serving.
Matcha Nice Cream
Ingredients
- 4 ripe bananas (peeled, sliced, and frozen)
- 2 tbs matcha powder
- 2 tablespoon plant-based milk (almond, coconut, or soy)
- 1 teaspoon vanilla extract (optional)
Instructions
- Slice the ripe bananas and arrange them in a single layer on a baking sheet.
- Freeze the banana slices for at least 4 hours or until completely frozen.
- Add the frozen banana slices to a food processor or high-speed blender.
- Sprinkle in the matcha powder.
- Pour in the plant-based milk and vanilla extract if using

- Blend the mixture until it becomes smooth and creamy. You may need to scrape down the sides a few times to ensure everything is well combined
- If the mixture is too thick, add a little more plant-based milk, one tablespoon at a time, until you reach your desired consistency.
- Scoop the matcha nice cream into bowls and enjoy immediately for a soft-serve texture.
- For a firmer texture, transfer the nice cream to an airtight container and freeze for an additional 30 minutes before serving.
