Whenever I think of chocolate pie, my mouth drools. Chocolate pie is something that literally heals your soul; it’s chocolaty, cream and smooth with the buttery and flaky pie crust; it’s heavenly. But with all that sugar and cream, is it healthy? What if I tell you yes, we can make it healthy without compromising on the taste and texture? Why use Tofu for this Pie?
Tofu is made from soy and comes in many types. I am using silken tofu specifically for making this pie for two reasons. First, the soy flavor in silken Tofu is very mild and not overpowering at all. The mild, earthy flavor takes on the chocolate really well without any notice of the soy flavor.
The second reason is the texture. The extra-firm silken tofu has a super silky texture that melts in your mouth. When blended, it gives a custard-like texture, which is ideal for creamy pudding pie like chocolate pie.
You will need…
- Silken Tofu: Silken tofu is the main base of the chocolate pie’s filling. Make sure to get the extra firm tofu for a smooth and silky texture.
- Maple Syrup: Maple syrup is the sweetener for the recipe. It is a perfect substitute for sugar and has that distinctive floral taste that really compliments the pie.
- Almond Milk: For this recipe, use unsweetened almond milk. Since I am using maple syrup as a sweetener, Sweetened almond milk might make it extremely sweet and overpower the chocolaty flavor.
- Chocolate Chips: I am using semi-sweet vegan chocolate chips, but you can also use dark chocolate chips.
- Vanilla Extract: Of course, vanilla extract is like the heart of every dessert. It enhances the flavor and brings out the dish’s irresistible aroma.
- Pie Crust: I am using a store-bought vegan one, but you can use your favorite crust or make it from scratch, too.
- Coconut Whip Cream: No pie is complete without whipping cream; coconut whip cream is the best alternative to regular cream. It is optional but highly recommended.
Things to remember…
- Remove the Tofu from water: Silken tofu often comes in water or liquid. You can gently scoop the tofu with a spoon and then use it; otherwise, the pie filling will be too runny.
- Wash Slimy Silken Tofu: If you feel that the tofu is slimy, gently wash it. Make sure to rinse until the sliminess is gone. Do check if the Tofu has an odd smell after washing. If yes, the Tofu has expired and should not be used.
Silky Chocolate Pie
Ingredients
- 12 oz Silken Tofu (extra firm)
- ½ cup Almond Milk (unsweetened)
- ½ cup Maple Syrup
- 10 oz Chocolate Chips
- ½ teaspoon Vanilla Extract
- 1 Pie Crust
- Coconut Whip Cream (optional)
Instructions
- Bake your desired pie crust as directed on the packaging. Allow to cool.
- Place chocolate chips in a microwave safe bowl and warm in the microwave in increments of 30 seconds for about 2-3 minutes. Do not over heat! Just enough to have all the chips melt. Allow to cool for a few minutes.
- In a food processor add the tofu, milk, maple syrup, vanilla extract, and chocolate. Blend for about 30 seconds. Take a spatula and scrape the sides and blend again until the mixture is completely smooth.
- Pour mixture into the cooled pie crust. Allow the pie to set in the refrigerator for at least 6 hours.
- Cut pie into 8 pieces and enjoy with coconut whip cream!
